Adam’s Seriously Good Ice Cream

Last March, I connected with Adam again and finally got to visit his kitchen lab slash factory in Makati. I first met Adam Lieberman at his restaurant at the Fort, called Rose, 3 years ago. Although the food at Rose was superb, I couldn’t forget that dinner mainly because of the dessert, which was ice cream. Not a whole lot of sweets strike me, but Adam’s homespun ice creams are really remarkable to say the least.

Adam decided to concentrate on churning out these tubs of spectacle which birthed into the brand, “Adam’s Seriously Good Ice Cream.” Quite long for a name but it was simply and purely that, SERIOUSLY GOOD ICE CREAM.

I remember describing it this way, “their collection of signature ice creams are like designer clothes walking down the runway –original, distinct and in this case, tongue-catching.”  His ice cream held me. This is the perfect season for ice cream and in this extreme roast of summer, I don’t want anything else to comfort me.

Chocolate Flame

Dark, 80% Cacao Chocolate and spicy Japanese chillies

 

We started with the chocolate flame and it was a good strategy to open and awaken our palates immediately. The chocolate was dark, muted yet rich, just the way I like it and had lovely jolts of spice.

 

The Ambassador’s Butter Cream

A rich, buttery cream with pieces of homemade Almond Brittle Candy

One of their top bestsellers and one of my top three favorites, The Ambassador’s Butter Cream is a luminary in the selection with its desirable smooth brown butter cream satisfying every longing of buttery embrace. Sneaking in between are pieces of organic almond brittle that crackles inaudibly and dissolves mercifully on your tongue.

Figgy Bleu Ice Cream

Creamy, savory, Italian Bleu Cheese, mixed with Honey-soaked Figs

My all-time favorite of all of Adam’s Seriously Good Ice Cream is the Figgy Bleu. Love the name but love the ice cream better. It is a sweet symphony with anecdotal of savory nudging at you at the same time. If you love Italian Bleu Cheese like I do, it’s easy to fall in love with this ice cream. Lodged in between are honey soaked figs which cuts into the Bleu Cheese and kisses it with some pleasant tart fruitiness.

The bleu cheese was exactly in the middle of being mild yet rich, that savory flavor well-defined by the Italian cheese with an ideal sweet contrast of honey coating the small chunks of figs.

I shiver in cheerfulness every time I think of the Figgy Bleu.

The First Lady’s Fantasy

The best sugar-FREE chocolates sweetened with organic coco sugar, and a bit of honey

Those watching their sugar intake or glycemic index can merry in the fact that a sugar-free concoction actually exists. This was apparently made for a former First Lady who is famous for her love for shoes. It’s as delicious as any ice cream with a combination of dark and milk chocolate sweetened by organic coco sugar and honey… you won’t believe it is sugar-free.

Cherry Banana

Late-season sweet Black Cherries and ripe bananas

I was surprised with this one and didn’t think it would be on top of the chain but this was quite good. The banana flavor didn’t come on too strong but very delightfully delicate and the black cherries add a liquorish sweet taste.

Other Ice Cream flavors include PJ Vanilla, which is simple, unadorned and exquisite, The Chocolate Orange Tree which is refreshing orange ice cream with shavings of dark chocolate bark, Black Sesame Street, which is one other favorite but didn’t get to try in the last visit, The Infanta’s Favorite with Fresh Grade-A Madagascar Vanilla, Spanish Brandy, and roasted Hazelnuts, Dulcinea de Manila with real Spanish Manchego mixed with sweet red grapes and Katie’s Brew that has dark Sumatran coffee spiked with genuine Irish Guinness!

 

Adam also has a version that’s Dairy-Free. Flavors include Lemon Dream, Chiqui Monkey, Buko Bano, Black and White, and Coco Van.

He also delved into making cocktail sorbets. I got to try “It’s Bellini Thyme!” which is Prosecco, Peaches, Thyme, and Wildflower Honey and I enjoyed it.

 

Kudos to Adam who makes ice cream and these cold treats anything but boring. I tell you, The Ambassadors Butter Cream, Figgy Bleu, Cherry Banana and Black Sesame Street will definitely speak to you. You’ll forget your favorite commercial ice cream brand.
